Despite Australia’s reputation for being hot and dry, there is nothing more wonderful than waking to a winter’s fog enveloping the valley, partake in a long horse ride (all the gear provided), or take a brisk walk or mountain bike ride to the Wollemi pine forests, reputed to be 35000 years old.
